Social justice organizing is about working together to make sure everyone has the same chances and opportunities, no matter who they are.
For example, if some kids don't have enough to eat, organizers might work to get more food from donations. Or, if some kids can't go to school because their family can't afford it, organizers might fight for free education for all people.
But kids can also be organizers. I made some resources to help you out:

Before your class starts, search on the internet about your topic.
Think about what is important about your topic.
Write ideas.
Think about what is interesting.
Finalize idea.

Why
Organizations need money to do anti-racism / social justice work and it is very easy.
How
You can ask parents, family, friends and community to donate to one of these organizations. You can collect coins by yourself or have a party where you decorate containers to collect money with friends. You can hold a bake sale or lemonade stand.
